I'm happy with my life. I'm excited about my classes and maybe-flirting with a cute boy and in a fandom I love and actually getting along okay with my family. My second family of old friends are actually more available than usual, and I feel like I can ask to play with them. My roommates are cooperative and adorable in a baby-kittens way. I'm eating a balanced diet and exercising regularly.

...why, exactly, I'm still having trouble getting out of bed and tired all the time and all the rest of it, I don't know and would like to find out. Presumably it means I need different meds, because this is depression even though there is no cause for depression. Or it might be the fibromyalgia really getting a grip; I have a lot more aches and pains than I used to. But I would like it to stop, whatever it is.



IN OTHER NEWS: I was trying to downsize my mother's applesauce recipe to be A) makeable in individual portions B) within a half-hour space C) by small children with supervision, for my Preschool Methods class. Originally, I bought six apples for experimenting. This morning, in the depths of despair, I returned to the grocery store and bought two dozen. I promptly discovered what I had been doing wrong and now have twenty-two apples.

...There will be a lot of apple-eating in my future. I'm also considering giving apples to my teachers and hoping they're amused, or something, because LOTS OF APPLES. ^_^

Applesauce is SO EASY. SO easy. This is why we love it. You can make it, seriously, with a sharp knife, a pot, and a potato masher. You can make it more easily with other (still reasonably cheap, though) equipment...I'd recommend investing in at least a twenty-dollar strainer and a one-dollar apple slicer if you're planning to make enough for storage...but for just, like, a winter snack or side that's all you need.

I'll take whatever you're willing to give me for now. :D I'm not in a position to buy fancy stuff right now, but maybe someday...so something more basic might be good for now. The serving size doesn't matter as much because I tend to cook all my meals for the week on the weekend anyway. Adding making applesauce to that routine isn't so difficult. :D

Okay, so, for one serving:

Cut an apple into eight slices, remove seeds and peel. Cut each slice into four pieces.

Put one inch of water into the bottom of a pan. Add apple pieces. (If you are doing more than one, add apple pieces and then add enough water that they're all floating; an inch is enough for one apple, but ymmv depending on the size of your pot and apple pieces if you make a bigger batch.)

Bring to a boil. Cover and reduce heat to medium-high. Cook for fifteen minutes.

Drain. Mash flat on a flat surface (I recommend a paper plate.)

Add a dollop of jam, a squiggle of honey, or a dash of cinnamon if desired.


The cooking time is for ONE McKintosh apple, though; if you are doing more than one, or are using a different variety you may have to experiment a little. If you want to set it cooking while you do other things, you can just quarter, core and peel, but then it's a little trickier to determine it's done.

I recommend Jonathans, actually, if you can get them; they're what my mom uses and it makes a tart, strong taste. They may need a little sugar, depending on how tart you like it.



(If you add in a strainer, you don't have to peel them, and it's less exercise for the arm muscles.)
